Ingredients
2 cups moistened thick poha (or 2 cups of cooked rice)
2 cups cucumbers diced
2 cups tomatoes diced
1/4 cup raw cauliflower diced
1/2 cup of green gram sprouts
4 Tbsp olive oil
2 tbsp lemon juice
Poha is pressed pre-cooked rice popular in India.
Spices
0.25 cup cilantro, finely chopped (or other greens)
salt & pepper to taste
Steps
Prepare poha: rinse it 3 times, and drain excess water so poha remains only slightly moist.
