Ingredients

  • 2 cups moistened thick poha (or 2 cups of cooked rice)

  • 2 cups cucumbers diced

  • 2 cups tomatoes diced

  • 1/4 cup raw cauliflower diced

  • 1/2 cup of green gram sprouts

  • 4 Tbsp olive oil

  • 2 tbsp lemon juice

Poha is pressed pre-cooked rice popular in India.

Spices

  • 0.25 cup cilantro, finely chopped (or other greens)

  • salt & pepper to taste

Steps

  1. Prepare poha: rinse it 3 times, and drain excess water so poha remains only slightly moist.

  2. Mix everything ๐Ÿ˜‚
